Preheat the oven to 180°C (350°F) and lightly grease a muffin tin with cooking oil.

Finely chop the bacon and fry until crisp; finely dice the spinach and bell pepper.

Whisk the eggs and milk together in a bowl, seasoning with salt and pepper.

Divide the bacon, spinach, bell pepper, and cheese among the muffin cups, then pour in the egg mixture.

Watch out: Filling the cups all the way to the top makes them overflow as they puff — fill to about 80% full.
