Steps

1

Dice the tomatoes small and slice the basil into thin strips.

~3 min

2

In a bowl, toss the tomato, basil, 1 clove of minced garlic, 2 Tbsp olive oil, balsamic vinegar, salt, and pepper, and let it sit for 5 minutes.

~5 min

Why: Resting lets the tomato juices and seasoning meld into a deeper flavor.

3

Slice the baguette into 1cm-thick pieces and toast in a pan or oven until golden.

~5 min

Watch out: Over-toasting makes the bread too hard to bite through — pull it as soon as the edges turn golden.

4

Rub the remaining garlic clove over one side of the toasted bread for aroma.

~1 min

5

Top the toast with the tomato-basil mixture and finish with a drizzle of olive oil.

~1 min

Tips

  • Drain some of the seed liquid from the tomatoes so the bread doesn't get soggy.

  • Reduce balsamic vinegar into a glaze for a richer, more refined sweetness.

  • Add the topping right before eating to keep the bread crisp.

Storage

Store the bread and topping separately; eat the topping within 1 day of refrigeration.
