Steps

1

Soak the breadcrumbs in milk, then mix with the ground beef, ground pork, egg, minced onion, salt, and pepper to form a mixture.

~7 min

Why: Soaking the breadcrumbs in milk first makes the meatballs much juicier.

2

Shape the mixture into bite-sized round balls.

~5 min

3

Melt butter in a pan and cook the meatballs, rolling them, until browned all over.

~8 min

Watch out: Rolling them too often before they've set breaks the surface apart — wait until one side is cooked before rolling.

4

Boil the pasta in salted water.

~10 min

5

In the same pan used for the meatballs, sprinkle in flour and cook briefly, then add the broth, cream, and soy sauce and simmer until thickened into a sauce.

~5 min

6

Toss the cooked pasta in the sauce.

~2 min

7

Plate and top with the meatballs.

~1 min

Tips

  • The teaspoon of soy sauce is the secret umami booster — don't skip it.

  • If the cream sauce is too thick, thin it out with pasta water.

  • Serve with lingonberry jam if you have it for an authentic Swedish touch.

Storage

Meatballs and sauce keep refrigerated 3 days, frozen 1 month — cook the pasta fresh right before eating.
