Separate the white and green parts of the green onion and chop both finely.

Heat oil in a pan and add the white part of the green onion to make scallion oil.

Why: Cooking the green onion slowly from a cold pan lets its flavor fully infuse into the oil.

Pour in the beaten eggs and scramble, then add the rice and stir-fry together.

Watch out: Freshly cooked, moist rice clumps and turns mushy when stir-fried — use day-old rice or rice that's been cooled and fluffed.

Season with soy sauce, salt, and pepper, then stir in the green part of the onion and sesame oil to finish.

  • Day-old rice keeps its grains distinct for a much fluffier fried rice.

  • Render plenty of scallion oil so the aroma spreads through the whole dish.
