Steps

1

Cut the sausages and cheese sticks in half. Thread half sausage and half cheese onto each skewer, pat dry with paper towels, and dust with a thin layer of flour.

~5 min

Why: Batter slides right off a wet surface — the flour coat works as glue.

2

Mix the flour, 2 Tbsp sugar, baking powder, egg, and milk into a thick batter that falls slowly off a spatula.

~5 min

Watch out: If the batter is thin, the coating comes out thin and the cheese bursts through — add the milk a little at a time.

3

Transfer the batter to a tall cup. Dip each skewer all the way in, then pull it out with a twist for an even coat.

~3 min

Why: Dipping in a cup gives a far smoother coat than spreading batter by hand.

4

Roll in panko. For the potato corn dog, press thawed potato cubes firmly onto the batter by hand.

~4 min

5

Fry one at a time in 170°C (340°F) oil, turning as they cook, 5 to 6 minutes until deep golden brown.

~12 min

Watch out: If the oil is too cool, the coating peels off and soaks up grease — drop in a pinch of panko; if it floats up within 3 seconds, the temperature is right.

6

Drain, then sprinkle sugar all over while still hot, and zigzag ketchup and mustard on top.

~2 min

Why: Sugar first, sauce after — the Korean street vendor formula. Sugar only sticks while it is hot.

Tips

  • An all-cheese version (cheese only on the skewer) has the lowest failure rate for a first try.

  • Be generous with the sugar in the batter — a hint of sweetness is what makes it Korean-style.

  • Reheat in an air fryer at 180°C (355°F) for 5 minutes and the crispy-outside, stretchy-inside magic comes back.

  • Leftover panko and frying oil carry over nicely to the crispy dumplings (menu #3).

Storage

Best the day it is made. Refrigerate leftovers and reheat in an air fryer at 180°C (355°F) for 5 minutes.
