Soak the beef in cold water for 10 minutes to draw out the blood, then cut it into 3-4 large chunks.

Put the beef, onion, green onion, peppercorns, and 6 cups of water in a pot and simmer over medium-low heat for 35 minutes.

Why: A low, slow simmer keeps the grain of the meat intact and the broth clear.
Watch out: A hard rolling boil shocks the meat into shrinking and turns it dry.
Lift out the beef, let it cool slightly, and shred it into thick pieces along the grain.

Strain 2 cups of the broth through a sieve into the pot along with the soy sauce, sugar, and mirin.
