Blanch the napa cabbage leaves in salted boiling water 30 seconds to 1 minute until softened, then rinse in cold water and pat dry.

Watch out: Over-blanching turns the cabbage limp and it tears when rolled — just wilt it briefly.

Sear the smoked duck in a dry pan over medium heat on both sides until golden, rendering off excess fat, then let it cool.

Cut the garlic chives and onion into 5cm (2in) matchsticks.
