Gyeran Mari (Korean Rolled Omelette)

Beat the eggs with the salt, sugar, diced carrot, and green onion, then pour through a fine strainer once.

Why: Straining out the stringy bits gives an even color and a smooth, uniformly yellow roll.
Coat the pan with a thin film of oil and warm it thoroughly over low heat, then pour in 1/3 of the egg mixture.

Watch out: Medium heat or higher cooks only the surface and leaves brown spots — rolled omelette is low heat from start to finish.
When the surface is about 80% set and still slightly wet, roll it up starting from one end.

Why: The undercooked surface acts as glue that bonds the layers — roll a fully cooked egg and the layers separate.
Push the roll to one side, oil the empty space, and pour in half of the remaining egg to continue rolling.

Watch out: Let a little of the new egg flow under the existing roll so it all fuses into one piece.
Repeat once more with the remaining egg to build a thick roll.
