Steps

1

Boil the eggs in boiling water for 10-12 minutes, then transfer to cold water and peel.

~12 min

Why: Plunging them straight into cold water makes them easier to peel and keeps the area around the yolk from turning gray.

2

In a pot, combine the soy sauce, water, sugar, garlic, cheongyang chili pepper, and green onion, and bring to a boil.

~5 min

3

Let the marinade cool slightly.

~5 min

4

Place the boiled eggs in a heatproof glass jar and pour the cooled marinade over them.

~2 min

Watch out: Pouring in hot marinade toughens the egg whites and can stress the glass jar — always let it cool slightly first.

5

Refrigerate for at least 4 hours to let the flavor soak in.

Tips

  • A soft-boiled egg gives a moist, well-seasoned yolk that's even more delicious.

  • The flavor deepens significantly after a full day in the fridge.

  • Try adding quail eggs to the marinade too.

Storage

Refrigerate up to 5 days, sealed in the marinade — a handy banchan you can grab every day.
