Steps

1

Cut the eggplant on a diagonal, or split lengthwise into bite-sized pieces.

~5 min

2

Heat oil in a pan and sauté the eggplant until the surface turns golden.

~5 min

Why: Searing the eggplant in oil first coats the outside so it holds its shape instead of falling apart while braising.

3

Mix soy sauce, sugar, water, and chili flakes into a sauce and pour it into the pan.

~2 min

4

Add the minced garlic and green onion, and braise over medium-low heat until the liquid reduces.

~8 min

Watch out: Braising on high heat burns the outside before the seasoning soaks in — keep it at medium-low.

5

Finish with sesame oil and toasted sesame seeds.

~1 min

Tips

  • Searing the eggplant in oil first keeps it firm and chewy instead of mushy after braising.

  • For extra heat, add sliced Korean hot green chili peppers.

  • Works equally well as a rice side dish or a drinking snack.

Storage

Keeps 2-3 days refrigerated; tastes good cold too.
