Steps

1

Halve the chicken breasts and pound them thin, then season with salt and pepper.

~8 min

Why: Pounding it to an even thickness lets it cook through evenly when fried.

2

Set up flour, beaten egg, and breadcrumbs in three separate dishes.

~3 min

3

Coat the chicken lightly in flour, dip in egg, then coat thoroughly in breadcrumbs.

~6 min

4

Pan-fry in plenty of oil over medium heat, 5–6 minutes per side, until golden.

~11 min

Watch out: Too little oil or too low a temperature leaves the coating soggy — make sure the oil is at least 0.5 cm deep in the pan.

5

Drain on paper towels.

~1 min

6

Serve with lemon and your favorite salad or potatoes.

~1 min

Tips

  • Squeeze lemon juice directly onto the coating for the authentic Austrian way to eat it.

  • A double coat of breadcrumbs makes for an extra-crispy crust.

  • Cool freshly fried pieces without stacking them so the crust stays crisp.

Storage

Refrigerate 2 days — reheat in an air fryer or oven instead of the microwave to keep it crisp.
