Cut the chicken thigh into bite-size pieces and season with salt.

Dice the onion, potato, and carrot.

Watch out: Keeping it on high heat cooks the potato's outside while leaving the center raw — lower to medium and cook slowly.

  • Cook the vegetables fully before adding the curry powder, or an undercooked taste will linger.

  • Refrigerating overnight and reheating deepens the flavor.

  • For heat, a little Korean chili powder stirred into the curry powder works well too.
