Steps

1

Slice the chicken breast thin and season with the fajita seasoning and salt.

~3 min

2

Cut the bell peppers and onion into strips.

~3 min

3

Heat olive oil in a pan and stir-fry the chicken over high heat.

~5 min

Watch out: Chicken breast dries out quickly if overcooked — once the outside is done, add the vegetables right away.

4

Once the chicken is cooked, add the bell peppers and onion and stir-fry together.

~5 min

Why: Stop cooking the vegetables while they still have a bit of crunch — that's what gives fajitas their signature texture.

5

Finish with a squeeze of lime juice.

~1 min

6

Warm the tortillas and serve with the stir-fried filling and sour cream.

~3 min

Tips

  • Chicken thigh instead of breast makes it juicier and more tender.

  • Letting everyone build their own tortilla makes it fun for kids too.

  • Avocado or salsa makes it even more filling.

Storage

Refrigerate 2 days. Store the stir-fried filling separately and warm the tortillas right before eating.
