Steps

Rinse the rice and soak 30 minutes, then boil in salted water until about 70% cooked and drain.

Toss the chicken thigh with yogurt, minced garlic, ginger, curry powder, and salt, and marinate 20 minutes.

Why: The yogurt marinade lets the spices soak deep into the meat and also tenderizes it.

Steep the saffron in warm milk to draw out its color.

Heat oil in a pan and fry the onion until browned, setting half aside.

Watch out: Opening the lid often lets the steam escape and leaves the rice undercooked — never open it while it steams.

  • Cooking the rice only 70% of the way keeps it from turning mushy once it finishes steaming.

  • Fry extra onion and save half as a garnish for more aroma and crunch.

  • Wrapping the pot lid in a damp cloth before steaming helps trap in more steam.

Refrigerate 2 days, freeze up to 1 month. Reheat in the microwave with a splash of water to keep it moist.
