Steps

1

In a bowl or jar, mix the chia seeds, almond milk, honey, and vanilla extract until well combined.

~3 min

2

Stir once more after 5 minutes so the chia seeds don't clump together.

~5 min

Watch out: Skipping this step lets the chia seeds settle and clump into a solid mass at the bottom.

3

Cover and refrigerate for at least 4 hours, or overnight, to set.

~240 min

Why: The chia seeds need to fully absorb the liquid and swell up gel-like to get the pudding's signature chewy texture.

4

Before eating, top with sliced strawberries and blueberries to finish.

~2 min

Tips

  • Chia seeds swell to nearly 10 times their volume, so don't overfill the jar.

  • Letting it sit overnight or longer makes for a firmer, chewier texture.

  • Mix in cinnamon or cocoa powder for a different flavor twist.

Storage

Keeps refrigerated 3–4 days — great as a meal-prep breakfast.
