Bulgogi Deopbap (Bulgogi Rice Bowl)

Mix the sauce ingredients, massage into the beef, and marinate 10 minutes. Prep the rice and vegetables while you wait.

Why: The sugar and the enzymes in the grated onion tenderize the meat — 10 minutes is plenty for thin slices.
Slice the onion into strips and cut the green onion on a diagonal.

Heat a pan over high heat, then spread the beef and onion out wide and cook them almost like grilling.

Watch out: Cook it low and slow and you get watery, boiled-tasting meat — high heat, short time; if your pan is small, cook in two batches.
When the sauce has reduced to a light glaze, add the green onion and turn off the heat.

Why: Leave a little sauce behind — that's what soaks into the rice and makes it a proper rice bowl.
Spoon it over the rice, sauce and all, and sprinkle with sesame seeds. Add an egg yolk on top if you like.
