Boil the noodles for 4 minutes, then drain, keeping just 2 Tbsp of the noodle water in the pot.

Turn the heat to low and add only half to two-thirds of the liquid sauce packet. Save the rest — do not toss it.

Why: The sauce amount is 90% of the heat — start with half and work up to taste. That is the beginner formula.

Watch out: Most people dump in the whole packet and regret it — you can always add more, but you can never take it back.

Pour in the milk and stir for 1 minute until the sauce turns a creamy orange.
